Campagne contre la consommation de caviar d’origine sauvage
Et voilà, une interdiction de plus en vue… j’espère que les esturgeons d’élevage ne seront pas gavé comme nos amis les canards sinon on risque aussi de l’avoir dans le baba pour le caviar.
Si on continue de tout interdir, je me fait un rôti de caniche ce soir !!!
Trève de plaisanterie, je relaie ce communiqué de presse de Seaweb.fr car il s’agit en fait d’une très bonne initiative
Cettet campagne vise à éviter l’extinction d’une race animale à l’état sauvage (l’esturgeon de la mer Caspienne) et de permettre que les populations d’esturgeon sauvage se reconstituent.
Cela signifie sauver également la diversité du goût en garantissant que le caviar ne disparaisse avec l’animal qui le produit.
Donc, je ne peux que vous inviter à propoager cette campagne à la veille des fêtes et je cours tout de suite me faire une omelette d’oeufs d’estrugeons… faudra casser beaucoup d’oeufs.

La France est le 2ème importateur mondial de caviar Béluga derrière les Etats-Unis.
15 tonnes de caviar français ont été produites en 2004, un caviar aujourd’hui reconnu par les plus grands chefs.
Préférer désormais la consommation responsable du caviar d’élevage afin de contribuer à préserver l’esturgeon Béluga, une espèce emblématique de 200 millions d’années décimée à 90% en 20 ans par sur pêche et pollution : Voilà le message de la campagne « L’Autre Caviar » lancée cet automne en France par SeaWeb, ONG internationale dédiée à la protection des océans.
« L’Autre Caviar » en France constitue le premier volet d’une campagne européenne qui devrait s’étendre sur plusieurs années. Elle fait suite à la campagne « Caviar Emptor » développée depuis 2001 par SeaWeb aux Etats-Unis, le 1er importateur mondial de caviar Béluga. En 5 ans d’efforts, SeaWeb a notamment permis l’enregistrement de l’esturgeon Béluga sur la liste américaine des espèces menacées et la réduction de moitié de son commerce mondial de caviar.
En Septembre, SeaWeb a remporté une importante victoire dans cette lutte avec la déclaration, par le Fish and Wildlife Services, de l’interdiction d’importation du caviar Béluga en provenance des Etats Caspiens puis de la Mer Noire.
La France, deuxième importateur de caviar Béluga - presque une tonne en 2003 – est également aujourd’hui un producteur réputé de caviar d’élevage : 15 tonnes estimées pour 2005. Le caviar français est un produit de haute gastronomie, fruit d’une technologie de production et de processus sophistiqués de sélection, de maturation et d’affinage qui rivalise avec les grands caviars sauvages de Russie et d’Iran.
La campagne “L’Autre Caviar” sensibilisera de nombreux professionnels et relais d’opinion. Elle invitera notamment de nombreux chefs à s’exprimer sur la protection de l’espèce, les qualités gastronomiques du caviar d’élevage français et à faire le bon choix en remplaçant sur leur carte le caviar sauvage par « L’Autre Caviar » respectueux des ressources naturelles de nos océans. Pour mémoire, en quelques années grâce à la campagne « Caviar Emptor » de SeaWeb, plus de 300 chefs, de la côte est à la côte ouest des Etats-Unis, ont fait le bon choix en remplaçant à leur carte le caviar sauvage par le caviar d’élevage.
De nombreux témoignages de chefs français et recettes originales au caviar d’Aquitaine disponibles - des créations originales pour la campagne : macaron au caviar de Pierre Hermé, duo salé sucré des chefs du Park Hyatt Paris Vendôme etc.
L’histoire du caviar français, sa filière ainsi que les recettes d’une quarantaine de grands chefs français méritaient un livre : « Le Caviar Français - L’élixir de vie » vient de paraître aux Editions Atlantica.
